This is an easy quickbread that is perfect to share with neighbors and friends. It's like a gigantic blueberry muffin!
1 egg
1 c milk
3 T vegetable oil
2 c flour
1 c sugar
2 ½ t baking powder
½ t salt
2 c fresh or frozen blueberries
In a large mixing bowl, beat the egg, milk and oil. Combine the flour, sugar, baking powder and salt; gradually add to egg mixture, beating just until combined. Fold in blueberries.
Pour the batter into a greased 9x5x3-inch loaf pan. Bake at 350° for 50-55 minutes or until a toothpick comes out clean. Cool for 10 minutes before removing from pan to a wire rack to cool completely.
