Pumpkin Chocolate Chip Cookies

This is by far one of my most requested recipes.  In fact, someone that I shared this recipe with claims that it won her future husband over for good.  I don't know if that is completely true, but I do know that these cookies don't last long at my house!


1 c canned pumpkin
1 c sugar
½ c vegetable oil
1 egg
2 ½ c all-purpose flour
2 t baking powder
2 t ground cinnamon
½ t salt
1 t baking soda
1 t milk
1 T vanilla
2 c chocolate chips

Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well. Add vanilla, chocolate chips, and nuts. Drop by spoonful on greased cookie sheet and bake at 350 degrees for 10 minutes or until lightly brown and firm.
