Oregano-Lemon Chicken Thighs

I tried a new chicken recipe tonight for dinner and it was delicious.  The chicken was very moist and tender.  It was simple and easy to prepare yet it looked nice enough to serve when you have company over for dinner.  The recipe came from a Taste of Home recipe cards collection magazine.  I served the chicken with an orzo pilaf (see picture below), croissants, and green beans.


6 bone-in chicken thighs (3 lbs.)
3 T lemon juice
2 T honey
1 T olive oil
3 garlic cloves, minced
2 t dried oregano


Place the chicken in a greased 13x9x2-inch baking dish. Combine the lemon juice, honey, oil, garlic and oregano; pour over chicken.


Bake uncovered at 375° for 45 minutes or until a meat thermometer reads 180°, basting occasionally with pan juices. Makes: 6 servings.
