These roasted potates really are easy and they are a wonderful side dish for a casual meal. I served these potatoes with BBQ chicken sandwiches this week. This recipe originates from the Better Homes & Gardens cookbook. I've made just a few slight adjustments to the original recipe.
3 medium potatoes, quartered
2 T olive oil½ t onion powder
¼ t garlic salt
¼ t pepper
⅛ t paprika
Place potatoes in a greased 9x9x2-inch baking pan. Combine oil and seasonings. Drizzle over potatoes, tossing to coat. Bake uncovered, in a 450° oven for 30 minutes, stirring occasionally. Makes 4 servings.
