Tonight's meal was a change of plans dinner because it was one of those days when things didn't according to plan and I needed something quick and simple to prepare. I like this recipe because I typically always have the ingredients on hand and it's easy to prepare. It doesn't hurt that this Campell's Soup recipe tastes great too!
2 T butter
4 small skinless, boneless chicken breast halves (about 1 pound)1 can (10 ¾ oz.) cream of chicken soup
¼ c water
1 T lemon juice
2 cloves garlic, minced
2 cups hot cooked rotini pasta
Parmesan cheese
Heat butter in skillet. Add chicken and cook until browned. Add soup, water, lemon juice, and garlic. Bring to a boil. Cover and cook over low heat for 5 minutes or until done. Serve with pasta sprinkled with Parmesan cheese.
