Pumpkin Chocolate Chip Cookies

Pumpkin chocolate chip cookies fill the kitchen with such an inviting aroma that help to erase the it's been winter too long blues. I had extra canned pumpkin that I needed to use up and this recipe was perfect for the occasion. This is one of my most requested recipes!



1 c canned pumpkin
1 c sugar
½ c vegetable oil
1 egg
2 ½ c all-purpose flour
2 t baking powder
2 t ground cinnamon
½ t salt
1 t baking soda
1 t milk
1 T vanilla
2 c chocolate chips


Combine pumpkin, sugar, vegetable oil, and egg. In a separate bowl, stir together flour, baking powder, ground cinnamon, and salt. Dissolve the baking soda with the milk and stir in. Add flour mixture to pumpkin mixture and mix well. Add vanilla, chocolate chips, and nuts. Drop by spoonful on greased cookie sheet and bake at 350° for 12 minutes or until lightly brown and firm.
