Sausage & Penne Marinara

I recently found this recipe in a Taste of Home magazine.  Italian food is my very favorite so I knew I had to give this recipe a try.  You can't go wrong with a quick easy Italian dish served with garlic bread and a green salad for a perfect weeknight meal.  This pasta dish certainly fit the bill!



2 ½ c uncooked penne pasta
½ lb. Italian sausage links, cut into 1-inch pieces
1 large onion, halved and sliced
1 medium green pepper, sliced
1 T canola oil
1 can (14.5 oz.) stewed tomatoes, cut up
1 can (8-oz.) tomato sauce
1 t garlic powder
1 t dried basil
1 t dried oregano
½ t salt
½ t pepper
¼ t crushed red pepper flakes
Grated Parmesan cheese, optional


Cook pasta according to package directions. Meanwhile, in a large skillet, cook the sausage, onion and green pepper in oil over medium heat until sausage is no longer pink and vegetables are tender. Add the tomatoes, tomato sauce and seasonings; heat through.


Drain pasta; toss with tomato mixture. Sprinkle with cheese if desired.
