Peanut Chicken Pockets

A few weeks ago I succumbed to my addiction and purchased a Taste of Home Simple & Delicious magazine from the checkout newstand.  My cookbook cupboard is already bursting at the seams, but this magazine was too tempting to turn down.  In retrospect, I'm so glad I made this impulse purchase because I've gotten several wonderful new recipes.  This is a modified version of one of those.  These pocket sandwiches are the perfect weeknight don't feel like slaving over the stove meal!



2 c chopped cooked chicken
2 celery ribs, chopped
¼ c chopped cucumber
¼ c chopped unsalted peanuts
½ c low-fat mayonnaise
2 green onions, chopped
½ t dried parsley flakes
1 T lemon juice
¼ t each salt and pepper
4 pita pockets


In a large bowl, combine first 10 ingredients. Spoon chicken mixture into pitas.
