Today I was on the hunt for a new recipe to use up ripe bananas. I discovered this Taste of Home recipe among my collection of "To Be Tried" recipes and I decided that tonight was the night. I was very pleased with the result and I'll definitely make this cake again!
½ c butter, softened
1 c sugar
2 eggs
½ t vanilla extract
1 ¼ c all-purpose flour
¾ t baking soda
½ t salt
¾ c mashed ripe banana
½ c chopped pecans, toasted
In a large bowl, cream butter and sugar until light and fluffy. Add the eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, baking soda and salt; add to creamed mixture just until combined. Fold in banana and pecans.
Pour into a greased 8-inch square baking dish. Bake at 350° for 30-35 minutes or until a toothpick inserted near the center comes out clean. Cool on a wire rack. Frost with cream cheese or vanilla frosting.
