I found this recipe in a past issue of LDS Living Magazine. This easy to prepare salsa is really tasty. I love that this recipe doesn't require fresh tomatoes which means that you can prepare this even when tomatoes aren't in season.
1 small clove garlic
¼ c chopped white onion
1-14.5 oz. can diced tomatoes
½ bunch cilantro, chopped *(or 1 t dried cilantro if you don't have fresh stuff on hand)
2 T lime juice
¼ t salt
Layer ingredients in blender or food processor in order listed and process until smooth. Transfer to bowl and refrigerate until serving time. Will keep for 5 days in refrigerator.
