I wanted to take some cookies to a neighbor and I had some extra vanilla chocolate chips that I thought I could use. I went to my trusty family favorites cookbook and this is what I decided upon. You'll have to try these cookies yourself to see if they live up to their name!
6 T canola oil
¼ c butter, softened¾ c packed brown sugar
½ c sugar
2 eggs
1 t vanilla extract
1 ¼ c all-purpose flour
½ c baking cocoa
¼ t baking powder
1 c vanilla or white chips
1 c semisweet chocolate chips
In a large bowl, beat the oil, butter, and sugars until well blended. Add eggs, one at a time, beating well after each addition. Beat in vanilla. Combine the flour, cocoa and baking powder; gradually add to oil mixture and mix well. Stir in chips.
Drop by rounded tablespoonfuls 2-inches apart onto ungreased baking sheets. Bake at 350° for 12-15 minutes or until edges begin to brown. Cool for 1 minute before removing to wire racks to cool. Makes about 2 ½ dozen cookies.
