This is an easy and nutritious dinner! My husband usually isn't too fond of cooked vegetables but tonight at dinner he commented that he actually thought these vegetables were very tasty. I used the California blend of mixed vegetables and they really were delicious.
½ c fat-free Italian dressing
2 cloves garlic, minced
4 small boneless chicken breasts or 1 lb. of chicken tenders
1 t dried basil leaves
¼ t black pepper
1 pkg. (16 oz.) frozen mixed vegetables, thawed
2 T grated Parmesan cheese
Mix dressing and garlic in large skillet. Cook over medium heat one minute. Add chicken and season with basil leaves and pepper. Cook 4-5 minutes or until chicken is cooked through. Add vegetables to skillet. Cook 2-3 minutes or until vegetables are heated, stirring occasionally. Sprinkle with Parmesan cheese.
