2 or 3 medium-sized ripe bananas, mashed (enough to make 1 c)
1 ½ c flour
1 c sugar
6 T cocoa
1 t baking soda
½ t salt
¼ t baking powder
2 eggs
⅓ c vegetable oil
Preheat oven to 350 degrees. Spray a 9x5-inch loaf pan with nonstick cooking spray; set aside. Mash bananas with fork and measure to make 1 cup. In a large bowl, mix together flour, sugar, cocoa, baking soda, salt, and baking powder. Make a well in the center of the dry ingredients. In a separate bowl, beat eggs, oil, and mashed bananas. Pour into well in dry mixture; mix just until moistened. Pour into prepared loaf pan. Bake for 55-60 minutes for large loafs or 45-50 minutes for small loafs, or until wooden toothpick inserted into center comes out clean. Let stand in pan for 10 minutes, then turn out onto wire rack to cool. Makes 1 large loaf, about 16 slices.
